Using Karuppu Kavuni Broken Rice (Karuppu Kavuni Kurunai) as a morning porridge is an excellent substitute for tea or coffee. It provides sustained energy without the caffeine crash and is traditionally used in South India as a healing breakfast drink.
Preparation: The Traditional Morning Porridge
Since you are using broken rice, the cooking time is significantly reduced compared to the whole grain, and the texture becomes naturally creamy.
Ingredients
1/4 cup Karuppu Kavuni broken rice
2 cups Water (adjust for desired consistency)
Optional Additions:
Savory: Buttermilk, a pinch of sea salt, and a dash of roasted cumin powder.
Sweet: Coconut milk and a small piece of crushed palm jaggery.
Cooking Steps
Quick Rinse: Wash the broken rice once to remove any dust.
Soaking (Optional): Even though it is broken, soaking for 30 minutes will make the porridge smoother.
Pressure Cook: Use a 1:4 ratio (rice to water) and cook for 3 to 4 whistles until it is very soft and mashable.
